today was cold and rainy -- a perfect day for eating the last beets, which are a fall/winter item for me. i like to toss them in balsamic vinegar and olive oil before cooking in the oven. usually i add rosemary too, but i had none so i just sprinkled them with homemade lemon-rosemary salt and called it a meal. leftovers were included as usual, i had some spicy yoghurt dipping sauce in the fridge and it was perfect with the beet bits, as well as the red cabbage salad i also made. i have a craving (and ingredients that need to be used up) for lemon meringue pie, but no energy left for baking. maybe tomorrow...
usually beet juice washes right off my hands but not this time. i look like a bloody murderer.
while i'm trying to save my pennies for the trip, this perfectly odd and square pomegranate was irresistible. i hope it tastes better than the last one i bought, which had the flavour of nothing.
